Prior to the twentieth century, the prospect of cake for dessert did not always provoke smiles. Even talented chefs dreaded baking. Up until the late 1800s, ingredients were weighed on scales--many of which were notoriously inaccurate. This combined with the unsteady temperatures of hearth fires and wood burning stoves led to many scorched end products.
Historian Greg Patent notes that cake baking became less time consuming and far more successful when scales were replaced with cups to measure out flour, sugar, butter, and eggs. Some believe this is the origin of the term cupcake, although it is also true that the first tiny (and very portable) treats were probably baked in teacups.
In any case, by 1900 the introduction of manufactured muffin tins led to an explosion in the popularity of cupcakes, and soon both domestic and commercial bakers began to crank out a steady supply. The demand shows no sign of waning.
